Fabulous Fish Tacos

Serves 4

1 lbs white fish fillets
Olive oil
Red Cabbage Slaw
Mojo Sauce

Preheat the oven to 350 degrees.  Place the fish fillets on a baking sheet.  Drizzle with olive oil and sprinkle with the sea salt.  Bake the fish for about 15 to 20 minutes. 

Place some of the baked fish in the tortilla.  Serve the slaw on the tacos or on the side.  Top with the Mojo sauce. 

Red Cabbage Slaw

1/2 medium head of red cabbage, thinly sliced
½ small onion, thinly sliced (about ½ cup)
½ - 1 cup Cilantro, rough chopped (the more the merrier as far as I am concerned)

Mix the cabbage, onion and cilantro in a medium bowl.  Stir in dressing.

Juice from 2 limes
2 tablespoons Hot Sauce
3 Tablespoons Honey
1 tablespoon olive oil

Whisk to together all the ingredients in a bowl.

Mojo Sauce

½ cup mayonnaise
½ cup sour cream
1 big piece of Roasted red pepper ( you can get them in a jar, you’ll want about 1/3 cup)
2-3 tablespoons s.a.l.t sisters Mojo Seasoning
1 teaspoon paprika
lime juice

Put all the ingredients except the lime juice in a blender or food processor.  Blend until smooth.  Add just enough lime juice to thin the sauce down.  Then taste.  Add more Mojo seasoning if you want and/or more lime juice.
